Agave Granola with Walnuts, Flax and Blueberries

2 cups oatmeal
1/4 cup oat bran
1 cup agave
1 tbsp orange zest
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 cup dried blueberries
1/4 cup chopped walnuts
1 tbsp flax seed meal
2 tbsp maple or date sugar (optional)
canola oil spray
  1. Preheat oven to 350 degrees. Spray a cookie sheet with canola oil spray.
  2. Mix oatmeal, oat bran, agave, orange zest and cinnamon in a large bowl. Spread on cookie sheet and bake for 15 minutes.
  3. Toss with a spatula and continue to bake for 15 additional minutes. Transfer to a bowl to cool.
  4. Add blueberries, walnuts, flax and maple sugar and toss.
  5. This will keep in an airtight container for about 3 weeks.
