Gingerbread Cake with Sautéed Pears

1/2 cup applesauce
2/3 cup apple juice
1 cup light molasses
2 each egg whites
3/4 cup spelt flour
1 1/2 tsp baking soda
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1 1/2 tsp fresh ginger (grated)
1/2 tsp sea salt
1 tsp orange zest
  1. Sift dry ingredients.
  2. Mix wet ingredients.
  3. Place dry ingredients in a mixing bowl and add wet ingredients in increments of three.
  4. Mix well.
  5. Pour in a loaf or spring form pan that is sprayed with canola spray.
  6. Bake in a 350 degree oven for 45 minutes or until a toothpick comes out clean.
  7. Serve with sautéed pears.


Sauetéed Pears

4 each pears (peeled and sliced thin lengthwise)
1/4 cup maple syrup or agave
1/4 tsp nutmeg
1 1/2 tbsp vanilla yogurt
1 tsp vanilla extract
  1. Place pears in a sauté pan with all ingredients.
  2. Heat until syrup reduces by half.
  3. Serve warm or room temperature with cake.
