Spinach and Artichoke Dip

1 lb fresh spinach
1 can artichokes (try to use organic)
1/2 cup nonfat Greek yogurt or soy mayonnaise
1/4 cup soy mozzarella
1/4 cup soy or rice parmesan cheese
1 tbsp garlic (minced)
to taste sea salt and black pepper
olive oil spray


  1. Steam spinach for 1 minute.
  2. Drain in a salad spinner.
  3. In a small sauté pan sprayed with olive oilspray, sauté garlic for ½ second.
  4. Place all ingredients in a food processor and blend.
  5. Season to taste with sea salt and black pepper.
  6. Heat and serve with tortillas, your favorite low-fat crackers or whole grain pita.
