Middle Eastern Chicken Kabobs

¾ cup non-fat plain yogurt
1½ pound boneless chicken white meat (large cubes)
2 tsp fresh mint
saffron threads bloomed in water (hot, but not boiling for 15 min)
¼ tsp granulated garlic
1 tsp fresh minced garlic
1 tsp fresh minced shallot
to taste sea salt

 

  1. Combine all spices with yogurt.
  2. Marinate cubed chicken overnight.
  3. Skewer chicken and grill.
  4. Serve with hummus and pita.
