Orange Lentil Roasted Red Pepper Soup

1 tbsp olive oil
1 tbsp fresh garlic (chopped)
1 each onion (diced)
3/4 cup celery (peeled and diced)
3/4 cup carrots (peeled and diced)
16 oz orange lentils
2 each red bell peppers (roasted, peeled and pureed)
10 cups vegetable or chicken stock
to taste sea salt and black pepper
  1. Place olive oil in a sauté pan.
  2. Add onions and sauté until clear.
  3. Add garlic, sauté 30 seconds.
  4. Add celery, carrots, lentils, stock and roasted red peppers.
  5. Cook for about 20 minutes.
  6. Season to taste with sea salt and black pepper.
